So, thanks to very cheap cucumbers, I decided to make cucumber salads for the house, as they are low in calories, flavorful and very filling. Also, a cool and refreshing side dish.
I found the original form of this recipe and ended up having to modify it quite a bit, but it was universally welcomed and enjoyed by the house (Kiki, Sssargon, Seish and I). Look out for the red onion–If the onion has a strong flavor, cut out nearly half of it. It’s not going to be bad if you don’t, but the onion flavor can overpower the rest of the flavors. Elaine also thinks this would make a fucking tasty hamburger topping as a substitute for tzatziki sauce. We ate it with sausages and caramelized onions and peppers on bread, and the combination was good.
- 2 large cucumbers, de-seeded and thinly sliced
- 1 small red onion, very thinly sliced (I prefer half-circles)
- 2 tablespoons lemon juice
- 2 tablespoons plain yogurt
- 1 tablespoon mayonnaise
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon dried dill
- salt and a good bit of pepper to taste
Mix everything but the cucumbers and onions in a big mixing bowl. Then (cause I know you ain’t prepping for this) cut your cucumbers and onions, and add them to the bowl. Toss until everything is well coated. Serve chilled!
