4 skinless chicken breasts
5 tablespoons soy sauce
1 tablespoon honey
2 garlic cloves, sliced
2 red chiles, seeded and finely chopped (I skip this ingredient).
1 inch piece of fresh ginger, peeled and finely shredded
4 star anise
3 baby bok choy, quartered
Score each chicken breast several times with a knife and put each breast on a separate square of foil.
Combine soy sauce, honey, garlic, chilies, ginger and star anise in a small bowl, then spoon over the chicken.
Arrange 3 bok choy quarters on top of the chicken breasts. Seal the edges of the foil together to form parcels, transfer to a baking sheet and bake at 400*F for 15 minutes until the chicken is cooked through.
Allow to rest for 5 minutes, then serve parcels with rice.
