Okay, I made this for Rosh Hashana and it was SUPER Basic but also Super tasty potatoes.  I later made it again but subbed out some potato with some shredded zucchini. It was also great like that though quite a bit wetter. original link

1 tablespoon vegetable oil
10 potatoes, peeled and shredded
2 onions, peeled and grated
5 eggs
1/3 cup vegetable oil
2 teaspoons salt
1 teaspoon black pepper

  1.  Preheat an oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan with 1 tablespoon of vegetable oil.
  2. Combine the potatoes and onions in a large bowl. Mix in the eggs, 1/3 cup of vegetable oil, salt, and pepper. Pour the mixture into the prepared pan.
  3. Bake in the preheated oven until the top is golden brown and crisp, 1 1/2 to 2 hours.

It’s super tasty and easy potatoes!
