I modified this to fit and be deep fried because that’s less effort than pan frying.
2 small zucchini, ends trimmed, shredded
1 small russet potato, shredded
½ medium onion, shredded
2 teaspoons kosher salt, plus more
2 large eggs, beaten to blend
1 garlic clove, finely grated
½ teaspoon ground cumin
Freshly ground black pepper
⅓ cup all-purpose flour
½ teaspoon baking powder
shred stuff! mix non veggies together, then mix everything. make patties and fry them.
